Our mission is to create naturally leavened sourdough that nourishes the body and comforts the soul. We are rooted in tradition and guided by intention, honouring the slow, time-tested art of bread making while embracing a mindful approach to every loaf we create.

Each batch is crafted with care, using wholesome, thoughtfully chosen ingredients and time-honoured methods that allow flavour, texture, and character to develop naturally over time. At Wild Sourdough, we believe that real bread is more than just food. It is something deeply grounding. It tells a story of patience, simplicity, and connection. A story shaped by hands, time, and care. We aim to bring a sense of quiet joy back to everyday eating, creating bread that feels honest, nourishing, and made with purpose.

Our Story

We believe that good bread takes time.

Rooted in traditional methods and guided by natural fermentation, our loaves are crafted slowly, using wholesome ingredients and a deep respect for the process. Each bake is a balance of simplicity and intention — where flour, water, and salt are transformed into something quietly remarkable.

“Wild” refers to wild yeast- the natural, living cultures that make sourdough what it is. These yeasts occur naturally in the environment and are nurtured over time, rather than being commercially produced. They are slower, a little unpredictable, and full of character… which feels very us.

Working in a micro-bakery is much the same. It is never rushed, sometimes challenging, but always full of care and enjoyment. We work at the pace good bread needs, not the pace of mass production.

We don’t rush the process, because we believe flavour, texture, and character develop best when left to nature. From our signature wild culture to every hand-shaped loaf, our focus is on creating bread that feels honest, satisfying, and deeply connected to its origins.

Our Process

starter

Our process begins the day before baking with the preparation of our wild sourdough starter.

It is left to develop overnight in a controlled environment, allowing it to become active, bubbly, and ready to leaven the dough naturally.

dough

Using a specially tested formula, we mix our dough through a series of stages- combining, mixing,

and folding to build strength and structure. It is then left to rest in a warm environment for bulk fermentation.

After fermentation, the dough is divided and shaped by hand into its final form. Each loaf is prepared with
care, then placed into containers to rest and continue developing overnight through a cold ferment.

bake

Baking begins early in the day for any orders for the day, ensuring fresh loaves are ready by the

afternoon.

Each loaf is baked to achieve the ideal balance of crust, structure, and flavour. Some loaves are
parbaked where required, allowing them to be finished later while maintaining freshness and quality.

product

Once baked, the loaves are cooled before being sliced where required, then carefully packaged

and labelled according to type and order.

Attention is given to presentation, with each loaf wrapped in our signature brown paper and string,
finished with a rosemary sticker for a simple, natural touch.
